(Recipe) Vs Sweet Spicy And Savory Spaghetti Squash Casserole W/ Pineapples!
1 large spaghetti squash
1 package of Sweet Turkey Sausage
1 1/2 cup of Pineapples Chopped fine. (Crushed)
1 1/2 cups of grated parm cheese (The type you put on spaghetti)
2 cups of mild or sharp cheddar cheese
1 bottle of Classico Pesto sauce
1 1/2 cups of Jasmine rice (Cooked)
1 cup of chopped Cilantro
1 Bell Pepper chopped (Green, Red, or Yellow)
1 Onion chopped
1 lemon (Juiced)
4 Tablespoons of chopped Garlic
2 Tablespoons of ground Ginger
2 Tablespoons of Italian seasoning
1 Tablespoon of Oregano, Cinnamon, and Paprika
1 Teaspoon of Mild jerk seasoning (Walterwoods)
Salt, Pepper, or Seasoning Salt.. (Season to your liking)
Make Jasmine Rice and set to the side.
Preheat oven to 375 degrees F.
Slice large squash in half lengthwise and scoop out the seeds.
Place in baking dish, with a little water cut-side down. Bake for 35 to 40 minutes, until the flesh of the squash is easily pierced with a fork. When cool enough to handle, pull the squash strings out of the squash's center with a fork and transfer to a bowl. Reduce the oven temperature to 350.
Heat olive oil in a large, deep skillet over medium high. Add turkey sausage (slit open each casing and squeeze out the insides). Add onion, garlic, dry seasonings, bell pepper, and jerk seasoning. Cook, until meat is browned and the vegetables are tender, about 10 minutes. Add pineapples, pesto sauce, lemon juice. Cook for about 5 minutes. Remove from heat and add parm cheese.
Taste mixture to see if it's seasoned to your liking. Add spaghetti squash..
In a 8×8-inch baking dish add one thin layer of rice. 1 thin layer of squash mixture, and 1 layer of cheddar cheese. REPEAT until ingredient are done. Top with a thick layer of cheddar cheese. Bake, uncovered, for 20 to 30 minutes. For an extra-golden-brown top, place the casserole under the broiler for a few min.. when done. Remove from the oven .. let rest for 5 min.. and serve!
