Cheddar Herb Cornbread & Black Eyed Peas #ROTD #MeatlessMeals

Lately we've experienced a lot of snow and extremely cold temperatures which equates to a lot of snow days for my teenage sons. With the frigid temps it's not much for the boys to do but hang around the house, play video games and EAT!

Man! Can they EAT! So, I wasn't surprised when I noticed the food quickly dwindling away. So, I decided to check out the pantry to see what I could find. Imagine my surprise when I found an almost full bag of black-eyed peas probably left behind from New Year's Day. I also found a box of Jiffy Cornbread Mix and some samples of a herbed butter saute mix that I never used.

I quickly washed and rinsed the black eyed peas and added them to my large pot adding some salt and pepper. In the fridge I found a half of a red onion and a half of a yellow onion. I diced both up and added them to the black eyed peas. I also found a 1/4 of a cup of cheddar cheese that I added to jiffy mix. I also added the herb butter to the cornbread and the black eyed peas. I cooked the black eyed peas on low overnight. By morning everyone in the house wanted to know what I was cooking because it smelled so darn good. The cornbread wasn't cooked until later closer til dinner time.

When I was growing up my grandmother often cooked beans/greens and cornbread for dinner. Although she usually added meat, we didn't miss the meat. The seasoning from the onions and the herbed butter was all the seasoning I needed.

I cooked a meatless meal for my family of 5 using items I found in the pantry and a few left over items in the fridge. A complete meal that probably cost less than $1.00 per person to cook. The next time you're in between grocery store visits or your funds are a little low, search your pantry you never know what's left behind to make an entire meal. No meat, no worries

Nicckelodeon Garden Lites Muffins Make Great Healthy After School Snacks

My sons are big fans of The Teenage Mutant Turtles and Sponge Bob Square Pants. They are not however, big fans of vegetables.

Try as I might it is almost like pulling teeth to get them to consume vegetables with meals. I've recently discovered a way to get them to eat veggies in what has become one of their favorite anytime snacks, Garden Lites Chocolate Krabby Square Muffins and Teenage Mutant Ninja Turtles Muffins made with Zucchini and Spinach. My sons all say the Krabby Patty Square muffins taste more like brownies than muffins they are so good.

In no time they are snacking on Carrots, Zucchini or Spinach.They enjoy the taste and the portions of the muffins and I enjoy the fact they are eating Vegetables.

I have to admit from time to time I am also guilty of not eating enough vegetables either. I could blame it on my hectic lifestyle but the truth is I need to make a conscience effort to eat more vegetables daily. Garden Lites Cheddar Broccoli Bake is the perfect way to not only add vegetables to my meals but it's a great meatless meal. The cheddar and broccoli are paired perfectly and taste very good. The green vegetable rich cheesy meal is filling and does leave me with a heavy feeling after eating it. It's great for power lunches or after school snacks.
